Creamy Cold Cucumber Soup with Labneh
This cold soup made in a blender combines cucumber and fresh mint with labneh–three ingredients that complement each other perfectly.
Combine the cucumber, milk, and almonds.
Garlic, salt, and pepper in a blender with 1/2 cup mint leaves.
Until smooth, blend.
In three bowls, divide the soup.
To the centre, add 1 tablespoon labneh.
Add a few mint leaves and a tablespoon of olive oil to each bowl as a garnish.
