Corn and Bacon Pizza
In this unusual pizza with a cauliflower crust and toppings of bacon, green onions, and parmesan cheese, pureed roasted corn takes the place of mozzarella.
Set the oven to 425 degrees Fahrenheit (220 degrees C).
Use parchment paper to line a pizza pan or cookie sheet.
On the prepared pan, spread the crust.
Blend 2/3 cup of corn kernels until completely smooth.
If necessary, add water 1 teaspoon at a time.
Near the edge of the crust, evenly distribute the puree.
On top of the corn puree, evenly distribute 2 ounces of Parmesan cheese.
Add 4 tablespoons of corn bacon and green onions on top of the cheese and corn puree in an even layer.
2 tablespoons of Parmesan cheese should be added.
Bake for 13 to 15 minutes in a preheated oven, or until the crust is golden and crisp.
