Coconut Gumdrop Cookies
This gumdrop cookie recipe is chewy and sweet. The flavors of oatmeal, coconut, gumdrops, and pecans are blended to perfection.
Set the oven to 375 degrees Fahrenheit (190 degrees C).
Grease baking trays.
Using an electric mixer, whip shortening and sugars in a sizable bowl until light and fluffy.
One at a time, beat in the eggs, mixing thoroughly after each addition.
Add vanilla and stir.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt; gradually stir into the creamed mixture until combined.
Add the gumdrops, coconut, pecans, and oats.
Place dough balls the size of walnuts on prepared cookie sheets two inches apart.
To gently flatten cookies, use a fork dusted with flour.
Bake for 8 to 10 minutes in the preheated oven.
Before moving the cookies to a wire rack to finish cooling, give them five minutes to cool on the baking sheets.
