Chicken Enchiladas Suizas
‘Suizas,’ Spanish for Swiss, refers to the creamy white sauce that tops these chicken and green chile-stuffed enchiladas.
Over high heat, quickly bring a pot of lightly salted water to a boil.
Cover the boiling water after adding the chicken.
Prepare for 15 to 20 minutes, then drain and set aside.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Grease a 10×15 baking dish very lightly.
In a skillet over medium heat, melt the butter.
In the melted butter, cook the onion, green and red bell peppers for 5 to 8 minutes, or until they are just soft.
