Buttermilk Oatmeal Muffins
Hearty buttermilk oatmeal muffins made with quick oats are a great and easy way to start the day for a convenient breakfast that everyone will love.
Oats and buttermilk should be combined in a big bowl and left to sit for 15 minutes.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Prepare 24 muffin tins with grease or paper liners.
In a small bowl, whisk together the eggs, brown sugar, and butter.
Stir into the oat mixture.
In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt; stir into the oat mixture until just moistened.
About 3/4 of the way full, place prepared muffin cups.
Bake in the preheated oven for 15 to 18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Before being removed to completely cool on a wire rack, let the food cool in the pans for 10 minutes.
