Better Morning Glory Muffins
These kid-pleasing morning glory muffins are packed with shredded coconut, whole wheat flour, flax meal, and dried cranberries in addition to the traditional apples, carrots, and pineapple.
Set oven to 350 degrees Fahrenheit (175 degrees C).
12 big muffin tins should be greased.
Combine cranberries, all-purpose flour, and brown sugar.
In a bowl, combine salt, baking soda, coconut, flax seed, and cinnamon.
Stir in the grated apple and carrots after adding them.
Applesauce, pecans, pineapple, vegetable oil, and vanilla extract should also be added.
Fill the prepared muffin tins with the batter.
About 35 minutes into baking in the preheated oven, a toothpick inserted in the centre of a muffin should come out clean.
