Apple Pie Muffins
These buttery fruity muffins are ideal for dessert or fancy weekend breakfast treats.
Set the oven to 375 degrees Fahrenheit (190 degrees C).
A 12-cup muffin tin should be greased or lined with paper liners.
Mix 2 1/4 cups flour, baking soda, and salt in a sizable bowl.
Mix the egg, buttermilk, 1/2 cup melted butter, vanilla, and 1 1/2 cups of brown sugar in a separate, smaller bowl until the sugar has dissolved.
Pour into the flour mixture while also adding the apple dice to the bowl.
Just stir enough to combine everything.
Spoon the mixture into the muffin tin, filling each cup to the brim.
