Alberta Beef Barley Stew
Beef barley stew, Alberta-style, simmered in the slow cooker, is sure to warm the heart and soul on the coolest of days.
In a microwave-safe bowl, boil 2 cups of water for about 2 minutes.
Once dissolved, add beef bouillon cubes and onion soup mix to boiling water.
In a slow cooker, combine the bouillon mixture with the final 4 cups of water; turn the cooker to High.
In the slow cooker, stir in the beef, potatoes, onion, carrots, celery, and garlic.
Cook covered for 4 1/2 to 5 hours, or until potatoes can be pierced with a fork.
After adding the barley, cook the mixture for another 30 minutes or until the barley is tender.
Turn off the slow cooker, remove the lid, and let the food cool until it has slightly thickened, about 5 minutes.
