Addictive Pumpkin Muffins
a pumpkin bread recipe with low fat and no oil. For an even healthier treat, try replacing half of the sugar with a heat-stable sugar substitute.
Set oven to 350 degrees Fahrenheit (175 C).
Prepare three 12-cup muffin pans with cooking spray or line with paper liners.
Ten minutes of hot water soaking in raisins will help them become plumper.
Combine the flour, sugar, baking soda, baking powder, salt, nutmeg, cinnamon, and ground cloves in a large bowl.
Until smooth, combine the eggs, pumpkin, and applesauce in a different bowl.
To create a smooth batter, add this mixture to the dry ingredients and stir well.
The batter should be mixed with the raisins and walnuts.
Fill the prepared muffin cups with batter.
